Zetter hotel trio to open London restaurant next year
The team behind the Zetter hotel in London are to open new restaurant next year.
Mark Sainsbury, Michael Benyan and chef Bruno Loubet (pictured) will open Granary Square Kitchen in King's Cross in January 2013.
The 6,300sq ft restaurant will be designed by Russell Sage and offer seating for up to 80 in the main dining room and 40 in the bar, as well as 100 outside on Granary Square.
Loubet will oversee the kitchen and the menu will showcase international influences with a big focus on vegetables. The Corner Counter will offer hearty dishes to take away.
Loubet commented: "Vegetables are finally getting more attention! Increasingly I am seeing people growing their own and chefs being more adventurous with new and old varieties. I have always had a passion for vegetables, and love tending my own little garden at home.
"While we will not be a vegetarian restaurant, there is so much cooking scope with vegetables that I am looking forward to exploring at Granary Square."
Loubet will remain in charge of Bistrot Bruno Loubet at the Zetter and will divide his time between the two sites.
