Green & Fortune won the 10-year catering contract at the new London Museum in Smithfield earlier this year
Robin Gill has been named as the food curator at the new London Museum in Smithfield, due to open on 28 November 2026.
The 10-year contract at the Smithfield museum was won by Green & Fortune earlier this year, with plans to open four hospitality spaces including all-day dining, café and grab-and-go formats. It will also lead catering for the museum’s venue hire events.
Green & Fortune will work in partnership with Gill, who will collaborate with chef director Dan Rampat on the culinary direction across all four venues.
The museum’s culinary offering comprises the flagship 140-cover restaurant Clerks House at London Museum; Bartholomew’s bar; the Temperance Cocoa Rooms café which will be open 24/7 from Thursday to Sunday; and an incubator space called the Roost which will offer rotating six-month residencies of London’s up-and-coming talent to an intimate 14 covers.
The caterer has also announced that Mr Lyan Studio will work on the drinks offering at Bartholomew’s bar, with head of beverage Joe Boxall using the museum’s galleries and exhibitions as inspiration.

The London Museum in Smithfield will open in November following a decade-long restoration of the Victorian General Market. The F&B venues will be located throughout the museum, with many offering street entrances.
The venues, with interiors designed by Russel Sage Studio, will blend restored original features with contemporary design and celebrate London’s food culture past and present – from pie shops and oyster bars to late-night cafés, bakery counters and modern street food.
