Salad Project to open four restaurants in four months

The Salad Project is set to open four new London restaurants over the next four months as it ramps up its expansion plans.

The salad bar group was founded by Florian de Chezelles and James Dare in 2021 and has since grown to seven London sites.

Writing on LinkedIn, De Chezelles said it was lining up sites in Victoria’s Nova development, in Battersea Power Station, on Westbourne Grove in Notting Hill and next to the Tate Modern in Southwark over the next few months.

He added: “Here’s to the next four years; four stores? 40 stores? 400 stores?”

De Chezelles previously told The Caterer he hoped to grow Salad Project to 20 restaurants by mid-2027 after securing £1m in funding last year.

Salad Project’s seven sites are all bespoke to their location in London and serve fully customisable salads and protein bowls made from scratch.

The group has teamed up with Dishoom to create a collaborative salad featuring the Indian restaurant group’s malai chicken and Kasundi mustard dressing.

Build-your-own salad bars are booming in popularity in London, with lunchtime queues typically seen outside brands including Salad Project, Atis and Tossed.

Tossed, which has 13 London restaurants, signed its first franchise partner in April with plans to open more than 50 new sites over the next four years.

Atis has 10 London locations and will launch its 11th in Battersea on 30 June.
