Simon Haigh rejoins Mallory Court as chef-director

Following a stint working as food and beverage director across the entire Eden Hotel Collection, Simon Haigh has rejoined the group's Mallory Court Country House Hotel & Spa in Warwickshire as chef-director.

Mallory Court held a Michelin star for a decade while Haigh was head chef at the hotel's dining room, and it still holds three AA rosettes.

Much of the restaurant's produce is sourced from the hotel's kitchen garden, which is tended by estate manager Chris Holdsworth and gardener Giles Holdsworth.

Prior to Mallory Court, Haigh was head chef at Scotland's Inverlochy Castle near Fort William, during which time it also won a Michelin star. He then joined Seaham Hall hotel in Northumberland, gaining three AA rosettes.

He said: "I am excited to be back at Mallory Court again. We cook with the seasons and change the menu every day. I like the seasonality of things – the produce not only tastes better, but it is more sustainable and you have less food waste."

Nick Hanson, general manager of the 42-bedroom hotel, said: "We are delighted Simon has returned. He is one of the most respected fine dining chefs in the UK and his food is a big draw."

The Eden hotel group also includes the Arden hotel in Stratford-upon-Avon; the Greenway Hotel & Spa in Cheltenham; Brockencote Hall in Kidderminster; and Bovey Castle in Devon.
