Woongchul Park, the chef-owner of the Michelin-starred Sollip in London Bridge, has launched a Korean fried chicken concept.
Park brings Papa Dak (‘dak’ meaning chicken in Korean) to all-day dining venue Flat Iron Square in London’s Southwark, which will serve more casual food designed for sharing.
The menu includes two signature fried chicken dishes - the Korean Red, which is glazed in a sticky, sweet and spicy sauce, typical of the Korean yangyeom chicken style, as well as the Guinness Black, which pays homage to the resurgence of the stout across London.
Diners will also be able to order another Korean street food classic, the so-tok so-tok skewers, which feature alternating pieces of sausage and Korean rice cakes. The name so-tok is a shortened portmanteau of sausage and tteok, meaning rice cake in Korean.
Park said: “The menu at Papa Dak is all about big flavour in every bite - saucy, delicious and exactly what you want when those indulgent cravings hit.”
Park and his wife Bomee Ki opened Sollip in August 2020, showcasing Korean-inspired fine dining with a French and European twist.
The restaurant received a Michelin star in February 2022.
