Stan Wróblicki, sous chef at the two-Michelin-starred Clove Club, has been appointed head chef at sister restaurant Bar Valette in London’s Shoreditch.
He replaces 2025 Roux Scholarship finalist Erin Jackson Yates, who launched the more casual European diner with Clove Club founder Isaac McHale in January.
Wróblicki has just returned from a research trip around the Basque region and will be looking to bring his creativity to the menu at Bar Valette, which focuses on Southern French and simple Spanish cooking.
The Warsaw-born chef has spent over a decade working in Michelin-starred restaurants, starting at Jason Atherton’s Pollen Street Social and Dabbous in London before moving on to Pure C in the Netherlands. He also completed a six-week stage at Noma in Copenhagen in 2021.
Wróblicki joined Clove Club in 2017 and has spent the past eight years rising through the ranks to sous chef. The Clove Club also secured its second star in 2022.
Bar Valette features a 40-cover dining room with an open kitchen and bistro-style curtains.
It took over the former site of Two Lights, another restaurant which was backed by the Clove Club team, which closed during the pandemic.
