The premium salad bar is due to open its first overseas site in Paris later this year.
The Salad Project has secured £9m in funding from investors including Deliveroo founder Will Shu to bolster its expansion into Europe.
The premium salad bar will be launching its first overseas site in the Paris’ Le Sentier district in spring/summer 2026, led by co-founder Florian de Chezelles.
The expansion is described as ’the brand’s first step towards building a broader European footprint’.
The London-founded business will also use this fresh investment to open ’six to seven’ further branches across the capital to meet ’strong demand’.
The Salad Project latest cash injection comes from long-time backers including Shu and Soho House founder Nick Jones, as well as new investment from private equity firm Active Partners, which has previous backed businesses including Honest Burgers, Sticks ‘n’ Sushi and Chicken Shop.

"The team has built a strong brand and product that resonates with consumers, reflected in the rapid growth of its London estate. We believe the business is well positioned to scale across the UK and internationally, and we’re excited to support its next phase of growth.”
The Salad Project was launched by de Chezelles and Dare in London’s Spitalfields in 2021 and has since expanded to seven sites across London.
De Chezelles previously told The Caterer of his ambitions to reach 20 sites by mid-2027.
