Chefs Tom Brown and Brad Carter are teaming up to launch a restaurant together in London’s King’s Cross.
Brown, who ran Michelin-starred Cornerstone in Hackney, has partnered with Carter, formerly of Michelin-starred Carters of Moseley in Birmingham, to open Island.
The restaurant will be set inside the Chandelier Room at Mare Street Market Kings Cross and is described as an “easygoing, refined celebration of meat and seafood”.
The 90-cover restaurant is the duo’s take on a traditional steakhouse with a coastal twist, and will draw on the skills of both chefs.
Brown, who is known for his seafood-led cooking, will focus on day-boat fish and shellfish while Carter is set to champion rare breed meats, with a nose-to-tail ethos.
The menu will include snacks such as caviar crisps, pickled cockles and jamon along with charcuterie such as trout pastrami or monkfish cheek ham and lardo.
Larger family-style dishes will feature unusual pairings such as quail stuffed with prawn paella or the signature island mixed grill.
The menu will also include daily-changing specials, weekly lobster rolls, and a spin on Sunday roasts with hot and cold oysters with clamato Bloody Mary’s and roast beef with all the trimmings.
Puddings will include an oyster ice cream sandwich or chocolate fudge cake.
“The name is a homage to the islands I have cooked on with Tom throughout our travels - from the rugged British coasts, to more tropical shores. The food is proudly local, with a fierce focus on sourcing the best of what the British Isles have to offer”, said Carter.
“Island is about bringing people together over great ingredients, cooked simply, it’s surf and turf fuelled by what we’ve learnt cooking together across actual islands all over the world," added Brown.
Brown, who closed Cornerstone last year, opened his eponymous restaurant at the Capital hotel in Knightsbridge last month.
