The hotel restaurant is the only Michelin-starred venue in Jersey
Tom Earnshaw has been appointed head chef at Bohemia, the only Michelin-starred restaurant in Jersey.
He will start his role on 8 June and replace former MasterChef: The Professionals contestant Callum Graham, who is leaving after nine years for a new role in the UK.
Earnshaw cooked at Michelin-starred restaurants including Moor Hall and Northcote in Lancashire and the Samling in Cumbria before joining Bohemia as sous chef in 2023.
Bohemia opened in the Club Hotel & Spa in 2004 and has held a Michelin star for 21 years, with previous head chefs including Shaun Rankin and Steve Smith.
In his new role, Earnshaw will oversee Bohemia’s kitchen and lead the development of the restaurant’s tasting and á la carte menus, which celebrate seasonal produce from Jersey and France.
He will continue to work with the island’s farmers and fisherman, as well as trusted French suppliers just 14 miles across the Channel.
Lawrence Huggler, owner of Bohemia and the Club Hotel & Spa, said: “We are thrilled to have Tom take the helm at Bohemia. I have known him for a number of years and have seen his passion, creativity and commitment first-hand. Having sampled his new menu, I am incredibly excited for the restaurant’s next chapter. I’d also like to thank Callum for his outstanding contribution and wish him every success in his new role in the UK.”
Earnshaw said he was looking forward to introducing his new dishes to the menu.
