Chef Tom Sellers’ restaurant has snapped up talent formerly of Scarlet Hotel, Ynyshir and Evelyn’s Table for the kitchen and front of house team ahead of its July opening
Chef Tom Sellers’s upcoming restaurant Mor, situated in Cornwall’s luxury coastal resort Carbis Bay Estate, has made a slew of key appointments ahead of its opening on July 20.
The restaurant has appointed Ynyshir and Gwen alumnus Corrin Harrison, who appeared on this year’s series of the Great British Menu, alongside Jack Clayton, formerly of Cornwall’s Scarlet Hotel.
Both new hires will join Sellers’ long-time collaborator Tom Anglesea, who will act as executive chef at the new restaurant, while Katie Russell, formerly of Evelyn Table and Elystan Street, has been appointed as general manager.
The upcoming opening will feature a fish counter, raw bar and charcoal grill, with its menu changing based on availability and seasonality. Guests can expect dishes such as Cornish bream, Mora Farm radish, sweet onion and chive and octopus and shiitake skewers, alongside desserts including Alphonso mango, daiginjo sake and kaffir lime and jasmine rice soft serve, English wasabi and cherry.
The restaurant’s interiors have been designed by Shayne Brady with bespoke artwork the Connor brothers.
Reservations for Mor will open on June 4.
