Chef Tomos Parry and the team behind Michelin-starred Brat in London's Shoreditch are to open a restaurant in Soho in June.

Mountain will be located on the former Byron site at 16-18 Beak Street in London and is described as a wood grill and wine bar.

Its menu will be inspired by Parry's favourite meals from his travels across Spain and build on his long-standing relationships with farmers and fisherman in Wales and Cornwall.

Dishes will include pink bream served whole, split and roast on the plancha; a plate of wood grilled lamb chops; and whole Anglesey lobster in a rich caldereta aromatic braise.

A traditional Menorcan dish, lobster caldereta, will be made to serve two to three people, while sides will include wood-fired rice and smoked potatoes.

The restaurant will feature a large counter bar and open kitchen, while a downstairs bar will serve classic cocktails and allow guests to watch chefs work a wood fire oven used to roast desserts, ensaimadas and almond tarts.

Mountain will serve vermouth on tap and the wine list has been created in collaboration with the Noble Rot team.

Parry said: "Caldereta, amongst others on the menu is the type of food I find hugely transportive and deeply satisfying to eat. I've always loved walking by the windows of Soho restaurant institutions catching glimpses of tables which began at lunch and are now threatening to roll into dinner. I can't wait for guests to eat these dishes and share in these moments, watching the world go past the windows at Mountain."

Brat has held its Michelin star in the Great Britain and Ireland Guide since 2018.
