Daise by Tony Parkin will open its doors on 4 February at Rose Mount in Oxton
Chef Tony Parkin has shared further details about his upcoming restaurant, which is to open in Prenton on the Wirral on 4 February.
He will open his first solo restaurant with his wife Laura Parkin.
Dishes at the Oxton restaurant will include the likes of line-caught Cornish squid with daikon, makrut lime, coriander and a hot and sour broth; hen of the woods with pine nuts, egg, tarragon and aged Parmesan; and roasted fallow deer with smoked beetroot, blackberry condiment, celeriac, pine and timut pepper.
A sample six-course menu shared by Parkin on Instagram was priced at £110.
Parkin started his career as an apprentice under John Campbell at the Vineyard hotel in Stockcross. He then moved to Copenhagen, where he worked for Michelin-starred kitchens at Kommandanten and Noma.
On his return to the UK, he undertook roles at Northcote, Restaurant Gordon Ramsay and Adam Simmonds at Danesfield House, before becoming head chef at the Tudor Room in Great Fosters from 2019 to 2022, during which time it won a Michelin star.
He also spent a few months as head chef at the Brickmakers Arms in Surrey before heading to Ireland to take on the role of chef-patron at the Michelin-starred House restaurant at Cliff House hotel in Ardmore.
More recently, he has been working with Aktar Islam at the two-Michelin-starred Opheem in Birmingham and with Andrew Sheridan at the Open Restaurant Group as development chef earlier this year.
