The new site will be a wine-forward restaurant with signatures dishes borrowed from Trivet
The team behind two-Michelin-starred Bermondsey restaurant Trivet are to launch a new concept within the Como Metropolitan London hotel this autumn.
Labombe by Trivet is a new partnership between chef Jonny Lake (pictured right) and master sommelier Isa Bal (pictured left), and the five-AA-star Old Park Lane hotel.
The wine-forward restaurant will open within the 144-room hotel but have its own dedicated entrance on Old Park Lane. It will focus on a by-the-glass selection of wines, while dishes will be designed around the grill with a small number of signature items borrowed from Trivet.
Lake and Bal said: “We are very excited to bring to life the full restaurant version of Labombe, particularly to such an iconic London location. We very much look forward to working with the team from Como Metropolitan London as we embark on this new adventure.”
Rory Slater, managing director of Como Metropolitan London said the hotel was “thrilled” to partner with Trivet.
“Labombe by Trivet promises to bring an exciting and distinctive experience to Mayfair through its unique and exemplary culinary offering,” he added.
Lake and Bal both previously worked at the three-Michelin-starred Fat Duck in Bray as executive head chef and group head sommelier respectively.
Bal won the Wine and Spirit Ambassador award at the 2024 Cateys and was praised by judges for his "long track record" in the industry.
Trivet has been shortlisted for the 2025 Menu of the Year Catey. The shortlist was selected by a panel of industry judges from Menuwatch articles that ran from May 2024 to April 2025.
