The former chef at the Michelin-starred Paul Ainsworth at No 6 leads the launch of Byatt’s Italian restaurant
Will Bee has been appointed head chef at Adam Byatt’s newly-opened Italian restaurant in London’s Wandsworth.
South Derbyshire-raised Bee was previously a chef at the Michelin-starred Paul Ainsworth at No 6 in Padstow and interim head chef at the Michelin-starred Lita in London’s Marylebone.
He has worked in kitchens since the age of 13 and studied culinary arts management at university.
Under the guidance of Byatt, Bee will oversee the culinary offering at Rosina on Wandsworth Common, which marks the Trinity chef’s first professional venture into Italian cooking.
The restaurant takes its name from Byatt’s daughter Rosie, who works in Rosina’s kitchen, and also has her own dessert: Rosie’s Torta Fedora.
The broader menu features dishes such as gnocco fritto with mortadella bologna, risotto bianco and cavatelli cacio e pepe, while the wine list has been curated by Byatt with a focus on organic and biodynamic Italian wines.
Bar manager Jason Duncan has also devised a cocktail list featuring five variations on a Negroni, as well as a range of spritzes, which will be served at the Thorn Bar.
The restaurant includes a terrace lined with olive trees and a private dining room for 14 guests.
Byatt said: “Choosing Will for this role was an easy decision. He is a blindingly talented cook, but it was also his leadership, maturity and drive that really impressed me. Working alongside Will to develop the menu at Rosina has been a joy. I have given steerage and direction, but, as with all my head chefs, they bring relevance and their personality. I’m sure Will will realise his dreams at Rosina.”
Byatt also operates the Michelin-starred Trinity and Bistro Union in London’s Clapham, Brasserie Constance in London’s Fulham and Charlie’s at Brown’s hotel in London’s Mayfair.
