Bakery is big business. Many bakery items, such as ‘dot cakes’ (iced sponge cakes topped with hundreds and thousands) and savoury Danishes are going viral on social media, driving consumers eager to try the latest bakes to queue for hours outside venues.
But for bakeries eager to grab a piece of the pie, high operating costs could stifle the resources needed to create new sweet or savoury treats. One solution is pre-made products, which can help give sites a head start on updating their bakery menu.

Nestlé Professional has launched a range of branded muffins with Brakes, produced in partnership with Cherrytree Bakery. The range features three variants inspired by Nestlé’s Aero, Rolo and Munchies brands, supplied frozen in cases of 24. Operators just defrost what they need and the muffins have a five-day ambient shelf life once thawed.

La Lorraine Bakery Group has expanded its sweet bakery portfolio with premium pastries and cookies. The new lines include butter croissants with a pistachio filling, finished with sugar pearls; double chocolate and salted caramel lava cookies made with Irish salted butter; and a filo pastry apple pie strudel stick (pictured) with cinnamon and spiced apple, which is suitable for vegan and vegetarian menus.

Bridor has added a praline and hazelnut swirl to its pastry collection. The Viennese puff pastry has a hazelnut and praline filling, topped by crushed hazelnuts. The pastries come frozen in boxes of 62 and need to be defrosted for 30-45 minutes at room temperature and then baked for 16-18 minutes at 165-170°C. The praline and hazelnut swirl is a Bridor ‘SelectBlend’ product, meaning it uses a fat blend made with RSPO (Roundtable on Sustainable Palm Oil) segregated certified palm oil.

The Panesco Pane Arte range is made with 100% Italian flour, biga dough and has a long fermentation to create a soft, aromatic crumb and a crisp crust. The fully baked range includes Pane Cereali, a multi-seed bread made with wheat, barley and semolina, enriched with linseed, sunflower and sesame seeds; Pane Rosa, a beetroot-infused bread; and Pane Rosmarino, a rosemary-flavoured bread made with potato flakes for a soft crumb. Each bread is hand-shaped and stone-baked to deliver a rustic appearance.

Pidy has added vegan pastries to its 9.5cm vegan sablée and veggie cups range. The veggie cups are made with vegetable powders, in beetroot, spinach, carrot or grilled onion flavours, and the plant-based Spicy Cup range comes in southern pepper, African falafel, Mexican chilli and Asian curry flavours. Operators can also choose from neutral, handcrafted and wholemeal finished tarts and quiches, ranging from 4cm to 22cm in diameter. The plant-based range also includes several chocolate and sweet tartlet cases.
