Two hospital school chefs won a day with renowned chef and spice meister Cyrus Todiwala after winning the **Schwartz Flavour Pairing Challenge **at Hospitality 2011.

Todiwala shared with them his knowledge of spices, their history, and creative ways of using them in the kitchens of his **Café Spice Namaste **restaurant in London. Dishes sampled included Papae Pur Eedu, Hyderabadi Curry, Cococnut Rice South Indian Style and Leeli Murghi ni Curry.
âToday has been a revelation, truly eye-opening,â commented the two winners. âAfter spending time with Cyrus, we have been inspired to look at, and use, spices in a very different way. We are bursting with ideas and look forward to sharing what weâve learnt when we go back to our kitchen; it will be quite easy to adapt some of the recipes and introduce new flavours to the children, which they will love.â
