Brakes has launched a range of handmade tray cakes under the Enchanted Bakery brand. The initial range comprises six tray cakes: triple chocolate fudge; strawberry Victoria sponge; banana caramel and malt; dragonfruit and lime; carrot and orange; and sticky rum and raisin. Both the carrot and orange and the sticky rum and raisin cakes are suitable for vegans. The range is delivered frozen in trays of 18 pre-cut portions, which helps to minimise wastage.

La Lorraine Bakery Group has launched two pastry ranges, Turkish böreks and Swedish knots. The crispy Turkish pastries are made from ready to bake phyllo dough comprising wheat flour, water and sunflower oil and without any rising agents (such as yeast). They are available in four variants: feta cheese with poppy seeds; Bolognese with black sesame seeds; spinach feta cheese; and chicken with white sesame seeds. Meanwhile, La Lorraine’s Panesco brand has introduced Swedish knots, ready to bake hand-folded double knots made from soft, rich dough in vanilla and cinnamon flavours.

Signature FSE is bringing de Buyer’s new Multi-Dough Roller to the UK. The all-in-one utensil for bakers enables precision rolling across all dough types and is designed to help overcome staff and skill shortages. The roller can be adjusted to dough thicknesses of 15mm to 0.3mm and the compact size fits most worktops.

Ingredients supplier Henley Bridge has released Prova Gourmet Natural Cocoa Flavouring, which allows makers to reduce the amount of cocoa in their creations without compromising on flavour. The flavouring provides roasted, powdery cocoa notes, while balancing out bitterness, and doesn’t contain any added sugar or colourings. With chocolate prices at an all-time high, bakers can reduce the amount of cocoa by 30% and replace it with 1% of the cocoa flavouring. The powder is also resistant to heat and has no impact on colour.

Frozen food distributor Central Foods has unveiled a new flavour in its range of Menuserve meringue roulades for foodservice. The Menuserve Peach Bellini Meringue Roulade is hand-rolled and filled with peach curd and Prosecco-infused dairy cream, topped with honeycomb pieces. It is gluten-free and suitable for coeliacs and vegetarians. There are two hand-finished roulades in a pack and each contains 10 portions. They take four hours to defrost at 4°C and once defrosted can be stored in the fridge for up to 48 hours.
