British albacore tuna is exclusively available to the food service industry from M&J Seafood after the company struck a deal with two Cornish skippers.

Native lobsters are also in good supply at this time of year.

Albacore tuna is smaller than the yellowfin species and yields smaller loins, which can be seared and sliced like a pork fillet or tenderloin. The line-caught fish is also lighter in colour than yellowfin with a comparable meaty taste and texture.

The skippers, John Walsh and Shaun Edwards, have exclusive rights to the waters off the south-west Cornish coast, and the fishery is currently undergoing Marine Stewardship Council preassessment.

Caterers can purchase the albacore tuna whole, weighing 3-5kg each, or as loins, weighing between 0.5kg and 1kg each.

The pot-caught native lobsters are sold individually, weighing 450-550g each.
