Details The consortium behind the world's best-selling PDO (Protected Designation of Origin) cheese now allows chefs to specify the vintage of the cheese, the area of provenance and even a specific producer from its 154 members.

This versatile hard straw-coloured cheese with a grainy, crumbly texture from Italy's Po Valley comes in three key vintages: 12-month - a pale, homogenous cheese with a delicate aroma; 16-18 month - grainy, full-flavoured with an aroma of dried fruits and hay; and 24-27 month - an intense, tangy, deep-coloured riserva.

USP Restaurants that promote the cheese across their menu receive two free wheels a year.
