Kluman & Balter has launched a bread improver in a block form to make it safer, more hygienic and easier to portion. Universal varieties and specialist varieties include the Luxe au Beurre improver for a full butter flavour, and a crusty malt improver.
The blocks are stored at ambient temperatures and come in 10kg packs containing 10 x 1kg blocks with 250g segregation marks on the wrapping.
As a guide, the company says a multipurpose bread recipe with 16kg of flour would typically require 3% improver and yield 54 x 400g loaves. A fermented fruit buns recipe with 16kg of flour would require 12% improver, yielding 560 x 60g buns.
