Brakes' Cod, Smoked Haddock and Leek en Papillote has been entered in the Main Courses and Centre of Plate section of Caterer's Excellence in Food and Drink Awards 2009.
A great eating, unusual centre-of-plate offer in traditional paper that provides a healthy option as it is oven cooked. It is made using prime cod fillet, topped with smoked haddock, cheese and mustard, placed on a bed of roasted leek and hand-wrapped in paper and tied. It offers a great visual and aroma when ‘unwrapped' by the consumer.
