The new CombiStar FX oven from Angelo Po has been designed to reduce food weight loss by 20%, kitchen time by 10% and energy consumption by 60% (compared with traditional cooking methods).
Its Eco function, which monitors all cooking processes, can be switched on during quieter times or for small amounts of food to save up to 10% in energy use when the oven is less than half full.
Features include six fan speeds, 20 cooking processes and a multipoint core probe. The oven can be combined with a smoking unit or a pasteurisation unit, which allows caterers to save more money by smoking their own oils or salts or by buying food when it is cheapest and pasteurising for future use.
The oven, which is stackable, has also been designed to work alongside Angelo Po's Chillstar blast chiller.
