Creative Base is a new unsweetened cream base from Pritchitts that combines cream and gelatine in a stable setting mix.
The mix can be used for a variety of dishes, including sweet and savoury mousses, panna cotta, cheesecakes and parfaits. It is also suitable for scrambled eggs and sandwich fillings, as the gelatine content eliminates separation of liquids.
The cream base only sets when refrigerated, making it easier to manage large quantities and delicate recipes.
The base, which blends well with other ingredients, has a shelf life of six months but must be refrigerated after opening. It is sold in 12 x 1 litre packs.
