Continuing our series looking behind the scenes at some of the major suppliers to the hospitality market, we catch up with Mike Butt, joint managing director, Dawson MMP

Q How would you describe your business?

A We are a provider of catering equipment products from four of the world's major brands and all the services required to sell and support these brands in the UK. The Dawson brand has gone through immense change in the last few years. More recently we have undertaken a significant restructuring programme, enabling us to focus more actively on customer delivery.

What are the issues facing your food service customers?

A Customers are looking for value, have an ever-increasing eye on ecological responsibility and want to reduce the costs of operating their catering facilities and businesses. They require equipment and products that help them tick all the boxes and satisfy all their needs without compromise.

How do you help them address these issues?

A For us its simple really, but a lot of hard work is necessary and that's why we're delighted to announce that we will launch a number of new products at Hotelympia. Together with our supplier partners we've developed products that offer genuine ecological benefits and provide significant energy savings.

Q What do you believe will be the next big trend in your market?

A Sous vide cooking is now being adopted by all areas of food production and it's up to us as a manufacturing partner to have equipment that offers this capability. The new Lainox Heart combi range we're launching at Hotelympia ticks this particular box.

Where does the company stand on green issues?

A Together with our manufacturer partners we fully embrace all ecological issues, from the use of responsible energy and resources to intelligent innovation and product recycling.

Everything we do, from our manufacturing processes through to our credentials and lifetime footprint of our equipment, has a complete eco-green consideration.

Long term, where's the business going?

A We want to be in the top 10 businesses of our type in the UK, by developing our products and services. We also want to strengthen the Dawson brand and the understanding of our company and our range of products
