The storage and serving cabinets provide precise control of moisture and heat to minimise the diffusion of water molecules from moist food to dry spots so food does not dry out and weight loss is below 1% in three hours.
The modular, easy-to-use 1,660mm-wide cabinets use just 0.18kW of power (compared with the 1.5kW consumed by more conventional units) and can hold up to 28 gastronorm 1/1 65mm containers, twice the load of traditional models.
