The English Beef and Lamb Executive (Eblex) has launched no fewer than 72 new cuts of Quality Standard beef, lamb and mutton, adding more value to carcases and enabling caterers to add more variety and interest to their menus.

"Because consumer requirements and eating habits are constantly changing, we keep adding new products on to the market, not only to satisfy consumer demand, but improve carcase balance and utilisation," said master butcher Dick van Leeuwen, the Eblex project manager who created the guide and manual.
The manual and guide are also available on DVD to members of the Quality Standard scheme, with all cutting specifications included as individual PDF files to aid communication between suppliers and customers.
The Eblex website also carries additional manuals for Quality Standard Veal, halal lamb, 'Quality Premium' and 'Master Butcher, Master Chef' Specialist Steak, and a new beef and lamb manual for the export market.
