Former Ivy chef launches first solo venture

A former chef from the Ivy has opened his first solo venture in London offering a menu of retro British food.

Ed Shaerf, who spent two years at the Ivy working his way up to sous chef in the private dining room, opened One Blenheim Terrace in St John's Wood earlier this month.

Located on the site that once housed A-Z Restaurants' Rosmarino and was most recently Italian restaurant Vineria, the new venture has the support of Pied à Terre and L'Autre Pied owner David Moore, who has come onboard as a consultant.

One Blenheim Terrace offers a modern British menu with retro influences. "We take traditional dishes from the 1960s and 1970s and reinvent them," Shaerf told Caterersearch.

"For instance, the classic baked potato with sour cream and chives takes the form of a potato consommé served with sour cream and chive gnocchi and edible flowers."

Other dishes include a roast chicken risotto, including chicken skin crackling, sage and onion crumble, summer truffle and gravy. "It's like a roast dinner but broken down," added Schaerf.

One Blenheim Terrace seats 48 diners in the restaurant as well as 20 on the terrace outside. Restaurant manager is Gemma James, former head waitress at the Ivy, while Schaerf's sous chef is Stuart White, who also joined from the Ivy.

The BBC's The Restaurant with Raymond Blanc's star Moore is consulting on the business. "Having David's support is invaluable," said Schaerf. "I'm a chef turning into a restaurateur so I have so much to learn and his advice has been amazing."
