New opening Melito will offer high-quality pizza by the slice

A new pizza restaurant is set to open in London later this summer, with the launch of Melito in Fitzrovia.

Located on Great Chapel Street, Melito will open on 1 September offering a range of high-quality "Roman style" pizzas, pastas, salads and focaccia sandwiches, for eat-in or take-away.

The proprietor of Melito is former 333 Holdings operations director and shareholder Simon Prideaux, who previously ran his own restaurant, Tartine, and worked at establishments including Vingt-Quatre, the Admiral Codrington and more recently Devonshire Terrace.

The menu at Melito will be overseen by food consultant James Kirby, while the restaurant will be managed by Alex Head. Interiors will be developed by DesignLSM, who have been briefed to create an "eclectic, informal and comfortable atmosphere".

Inspired by the "pizza al taglio", which is sold throughout Italy, Melito pizzas will be served by the slice and prepared on a long, rectangular board, with the use of home-made toppings including: salami piccante, red onion and rosemary and fennel, finocchiona and olive.

Prideaux commented: "I have become more and more fascinated by the fast casual dining market which has grown enormously over the past few years.

"Melito has been born out of the belief that there is still a gap in the market for great value, fresh, fast food using the best ingredients with minimal fuss - fantastic pizza by the slice has yet to make its mark."
