Two new turkey products have been launched into the education sector as part of the Bernard Matthews "Change Your Meat, Not Your Menu" campaign that encourages caterers to save money and create less fatty dishes by substituting turkey in dishes that traditionally use beef, lamb or chicken.

IQF Turkey Mince and IQF Diced Turkey (see Education, page 74) can be used in a host of popular dishes including curries and cottage pie, and pasta dishes such as spaghetti Bolognese - where it slashes the saturated fat content from 16g to just 5g by replacing beef.

As well as being healthier, says Bernard Matthews, turkey can often be cheaper to buy than other meats yet can still command the same price on menus.
