The flexible, space-saving range of Hackman Metos combi-kettles, marketed in the UK by Rieber, can cook, mix and cool most foods from scratch and are claimed to produce higher volumes of food per square foot of floorspace than conventional cooking ranges.
Fully automated models require no user supervision once the food has been loaded, freeing staff from moving pots and pans around.
Features include precise and easy temperature control; thermal insulation; safe electric tilting mechanisms, BurnPrevent Control, which prevents overcooking and makes cleaner easier; automatic or manual control of the stirring; cook-and-hold programmes; optional cooling by tap or iced water; and automatic HACCP capture.
The SmartIce chilling system, using liquid pumpable ice, can take 200 litres of goulash from 98°C to 3°C in 45 minutes.
The kettles, which range in capacity from 40 litres to 300 litres, reduce power to suit the cooking programme to help save energy and running costs.
