Hoshizaki ROX water electrolyser from EO Water
Electrolysed water is a simple, safe, yet effective cleaner, sanitiser and disinfectant that is now available to European caterers courtesy of the ROX water electrolyser from Japanese maker Hoshizaki. The process combines tap water, a mild salt solution and an electric current to divide the water into alkaline and acidic water.
Alkaline water is an efficient detergent and degreaser with a similar pH value of 11.3 to domestic ammonia solution. Acidic water, or hypochlorous acid with a 2.7 pH, is not damaging to human skin and mucous membranes but is a powerful and rapid killer of a wide range of pathogens, bacteria and viruses including norovirus, MRSA, E Coli and Legionella. Because it breaks down microbial cell walls, it also prevents the development of resistant strains.
The system can replace the many chemicals currently used by caterers to wash hands; clean and disinfect fruits, vegetables, meat and fish; sanitise tables; and wash floors. It requires no storing, mixing or special disposal and costs less than 2p a litre based on a useful life of 3,000 hours.
