Hot-smoked Arctic Char from Brown and Forrest

Award-winning Somerset smokery Brown and Forrest believes its new hot-smoked Arctic Char provides a new taste experience which has, it says, generated ‘unprecedented customer feedback' in early tasting sessions.

The white-fleshed, well-textured fish - a relative of salmon - is sourced from a farm in Dorset where it is bred in low volumes.

Once filleted, the sides are marinated in a brine with a base of brown sugar, soya sauce, sherry, garlic and lemon grass. The next step is to flash roast the sides over a roaring log fire before killing the flames to produce the smoke that will add a very subtle flavour to the fish.

The smoked char is priced £11 for 300g.
