The competition aims to encourage both professional and student chefs to find fresh and innovative ways of using Lactalis' Galbani Mozzarella, the leading Italian cheese brand in both Italy and UK that is regarded by many as the "original Italian" mozzarella.
The mozzarella-inspired dish must be suitable for a restaurant or gastropub menu and can be a hot or cold starter, main meal or dessert. Entries will be judged by Harris and members of the [Craft Guild of Chefs](http://www.craftguildofchefs.org/).
Two winners of the professional chef category will enjoy a four-day course at Cucina Valentina (Harris' culinary holiday in Umbria) that will incorporate wine tasting, black truffle hunting, trips to local markets and hands-on cooking experience with Harris.
One student chef will also win a one-to-one cookery lesson with Harris at her London kitchen along with a £500 cheque, while five runners-up receive a copy of her latest book of Italian recipes.
