The award-winning 402S accelerated cooking combi from Merrychef (an operating division of Enodis) can cook food up to 15 times faster than conventional ovens, with typical cook times ranging from 15 seconds to one-and-a-half minutes.
The oven, which is a compact 586mm high and wide and 762mm deep, combines a 1,500W microwave oven with convection and impingement heat. The impingement plates can be removed to run the appliance as a pure convection oven.
Unlike other microwave combis that use top- or bottom-launch microwave systems, the 402S uses a side-launch energy system that allows caterers to use metal baking sheets and pans in the oven, such as the newly launched griddle pan that provides an authentic grilled finish to fish, meat and vegetables. No ventilation hood is needed, thanks to a built-in catalytic convertor.
The oven offers multi-stage programming, with each programme providing up to eight stages, each with its own time, fan speed and microwave power settings.
It also comes equipped with Merrychef's trademark MenuKey technology, which allows operators to programme precise instructions for the combination and convection cooking of selected items into the machine. This has recently been updated with a USB version that plugs into a computer to download menu updates to multiple locations in seconds.
The 402S, which won the Microwave Oven and Induction Hob section of the 2006 Excellence in Catering Equipment and Supplies Awards, is part of an accelerated cooking line-up that includes four microwave ovens, Merrychef 500 Series ovens and the EC401, EC403, EC501, RD401 and RD501 models.
