All Miyabi knives get the original Japanese Honbazuke honing that only the best Japanese master craftsmen can produce. The new collection comprises four ranges: 7000D (seven knives), 5000S, (eleven knives), 7000MC (five knives) and 7000Pro (four knives).
There are Santoku knives, whose blades feature an incredibly sharp cutting edge made in a top-quality high carbon-content stainless steel which is sandwiched by 33 protective layers of steel; Kudamono and Shotoh knives, designed for the cleaning and cutting of fruit and vegetables; a Chutoh knife with a medium-sized symmetrical blade designed for the cleaning and carving of all kinds of fish and meat; and a Usuba knife featuring a very thin asymmetric blade designed for the fine cutting of herbs and vegetables.
