Montague Legend Steakhouse Broiler from Imperial
The Legend gas-powered Steakhouse Broiler is the latest addition to the Montague range of heavy-duty cooking equipment from Imperial Catering Equipment.
The broiler is a high-production over-fired griddle with a half-inch-thick polished steel searing plate. The high temperature generated by the plate allows for convenient searing of food to seal in juices prior to griddling.
The broiler uses the Radiglio burner developed by Montague to provide the best combination of heat and infra-red waves which are directed downwards by the ceramic radiant and penetrate the meat, cooking both inside and out, so it remains tender with minimum shrinkage.
The adjustable heavy-duty rolling grid allows the operator to adjust cooking to suit both the meat and the customer. The counterbalanced grids adjust with a range of three inches and roll easily on silent long-life ball-bearings. Grid clearance is between two and three inches.
To avoid splattering fat, splashguards have been fitted to the sides and back of the appliance and there are two traps for fat to run into.
The Steakhouse Broiler is available as a two-piece chrome-plated grid (model C36 measuring 27in (w) x 27in (d)) or three-piece grid (model C45 measuring 35in (w) x 27in (d)) and is equipped with a constant burning pilot for automatic ignition. Each burner is independently controlled and rated at 42,000BTU per hour.
Standard finish is stainless steel at the front with remaining exterior black, while the interior is a high-temperature tolerant aluminium. Optional extras are a full stainless steel finish and a grooved top plate.
