The new Alto-Shaam ASF-75G Gas Fryer with EcoSmart technology is claimed to offer the most efficient heat distribution on the market thanks to its burner and heat-exchange technology.
The fryer, which has just won the Kitchen Innovation 2007 award from the USA's National Restaurant Association and is currently awaiting CE approval, claims a 71% efficiency rating that exceeds that of its nearest rival by almost 11%.
The burner and heat exchanger system is powered by a fan-assisted combustion system with built-in controls for ignition and flame rectification.
The ASF-75G has robust, stainless-steel front, sides and fry tank, and the tank (which carries a seven-year limited warranty) can hold 33kg of frying compound. It offers a temperature range of 93-199°C; quick oil temperature recovery; dual solid-state controls with electronic ignition; and a melt cycle for solid or liquid fats and oils.
Other features include two fry baskets with automatic lift, oil filtration, a cleaning brush set, levelling front and rear cabinet castors, and a mobile oil trolley powered by a 1/2hp gear pump. The pump provides front access reset; 19mm full-port, ball-type drain valve; and a programmable memory for up to six product menu keys per lift.
