New banqueting lines from Chef Line Solutions

Banquet carts, cook and hold ovens, and regeneration ovens are among a new product range brought to the UK by Chef Line Solutions.

The Clima Chef is a plated regeneration and holding system created by Moduline for the continuous and simultaneous control of the time, temperature and humidity in the oven.

There are three preset programmes to take plated dishes from refrigerated storage to precise regeneration ready for serving or keeping for several hours at the serving temperature of +65°C. Wrap around heat technology, fans and humidity control eliminate the need for extraction.

There are six models, all of which stand flush with the floor and can accommodate all types of plate or tray rack transport trolleys.

The 1110mm wide MFP 20E has a tray capacity of 20 x GN 1/1 and a plate capacity of 60, as does the narrower 940mm wide MTP 20E. Also at 1110mm wide is the MFP 40E with a 20 x GN 2/1 or 100-plate capacity. All three are available as single-door or pass-through models.

The Forno Chef combines Clima Chef technology with a core probe facility for consistent results even with relatively inexperienced operators. The required product core temperatures are automatically reached with the core probe, while the Clima Chef gradually and automatically adjusts the temperature and degree of humidity in the oven during both the heating up and holding stages.

There are two ranges of Forno Chef, the RB range for regenerating products on trays or containers from -°C to +65°C, and the RP range for plated regeneration from +3°C to +65°C.
