New exhibitors at Hotelympia 2010

There are plenty of first-time exhibitors at this year's Hotelympia, taking place at ExCeL London from 28 February to 4 March. Here's a selection of what they'll be showing.

FOOD AND DRINK

AAK FOODSERVICE

Citing research that 658 million Chinese meals were dished up at home in the last year, AAK Foodservice has added Groundnut Oil and Toasted Sesame Oil to its range of infused olive oils, which also includes Basil, Chilli, Garlic and Lemon varieties.

In the Prep Premium range are Prep Long Life Oils for deep frying, which enable caterers to keep oil changes to a minimum. Other products include Lion condiments, dressings and sauces, and Whirl, an alternative to butter.

ARIAKE

This Japanese producer of natural seasoning bases opened two European factories in September 2007 to produce additive-free stock base and meat extracts. The products are available in frozen, ambient or powder formats, either based on the company's own recipes or made to order.

BJORGE OCEAN

A portion-packed, chewable Omega-3 is a new launch in the UK from Norwegian Bjorge Ocean. The capsules are already a success in Scandinavia where hotels, restaurants, staff restaurants and airlines are serving them with meals. The product comes in two flavours, tutti frutti or mint, encased in a vegetable capsule.

BLACK MOUNTAIN MINERAL WATER

Hatterrall is a premium bottled water making a return a century after it was first bottled. Records show that during the early 1900s a bottling abstraction licence was applied for in the Longtown Valley on several occasions. The existing village hall was originally built as a bottling factory around 1912 and produced Hatterrall Water, which was packaged in glass bottles and distributed primarily in London.

Based on the English/Welsh border in the shadow of Hatterrall Ridge, Black Mountain Mineral Water is best known as the producer of the Celtic Vale mineral water.

CAVIAR 4 EVERYONE

Costing a fraction of the price of traditional fish-derived caviar, Royal Organic Vegetarian Caviar was developed for caviar lovers concerned about the endangered sturgeon. It's made from GM-free organic soy, is cholesterol-free and claims to combine the luxury and taste of traditional caviar with the health and environmental benefits of being entirely vegetarian.

ENOTRADE

UK distributor of the Enomatic wine dispensing and preservation system, Enotrade is launching its new Elite range featuring an advanced computerised management system to monitor all the key functions of the system. The range will be available in five standard colours - elegant black, pearl white, stone grey, retro cream, and India brown - in addition to traditional stainless steel.

HOLY COW!

After establishing the brand in the retail market, Anu Bhandari is launching Holy Cow! sauces into food service. The sauces are designed to be used as alternatives to traditional condiments and as marinades or cooking ingredients.

There are currently five varieties - Spicy Bombay Ketchup, Goan Extra Hot Lime, Madras Spicy Mint, Himalayan Hot Garlic (pictured) and Monsoon Mango BBQ - available in 290g bottles for the table and 2.3litre containers for use in the kitchen.

The company sources high-grade ingredients, uses no artificial colours or flavourings and ensures the whole range is suitable for both vegans and vegetarians.

JM POSNER

A new range of waffle and popcorn-making equipment will be shown by J M Posner. Three waffle makers include traditional circular Belgian waffles, square waffles and the more unusual stick waffles, each featuring an adjustable temperature control, timer and non-stick surface while two new popcorn makers have a stainless steel finish and are available in 8oz and 16oz kettle sizes.

Also on the stand is the Kernal Season's range of shake-on popcorn toppings and specially grown Popcorn Kernels, which are available in six flavours - BBQ, Caramel, Chocolate and Marshmallow, Cajun, Nacho Cheese and Sour Cream and Onion.

NEW FOREST ICE-CREAM

Mango and Cream, Blueberry and all American Key Lime Pie are new flavours of dairy ice-creams from New Forest Ice Cream. The ice-creams contain no eggs, artificial colours or GM ingredients and all flavourings are from natural sources.

The company has also introduced a bespoke menu service to create personalised tabletop menus featuring ice-cream desserts. Customers can pick and mix from 53 ice-cream and sorbet presentations. The menus are available in a variety of formats and sizes, from contemporary through to more traditional designs.

PERTWOOD ORGANIC FARM

Pertwood Organic Farm has launched its four most popular cereals - Muesli Fruit & Seeds, Muesli Delicious Fruits, Granola Sultanas & Nuts and Farm Maple Flakes - in individual portion packs.

The products use the highest grade British-grown organic grains and are manufactured and packaged in the UK. The cereals are wheat-free, high in fibre and contain no added salt.

PREMIER AQUA

Premier Office and Premier Office Plus are atmospheric water generators, which produce fresh drinking water from the humidity in the air using an advanced carbon, reverse osmosis and UV filtration system.

Dispensing both hot and chilled water, the Premier Office provides up to 27 litres of drinking water per day while the Premier Office Plus, an advanced unit manufactured in stainless steel, provides up to 50 litres per day at a cost of 5p per litre.

Premier will also be showing its range of water purifiers, including a counter-top and vending machine option, and there will be a free prize draw to win a Premier filter RO, a counter-top six-stage water purifier worth more than £400.

ADVANCE CATERING EQUIPMENT

Advance Catering Equipment will show its recently-launched Thermodyne system, a versatile, low-temperature system developed in the USA for holding, slow cooking or reheating without overcooking or drying out.

The system eliminates uneven temperature control with Fluid-Shelf technology, which distributes heat uniformly throughout the cabinet by conduction from glycol liquid within the shelves. Thermodyne is available in a choice of sizes, from compact counter-top units to high-volume, dual cabinet models.

ANGLO CALEDONIAN ENTERPRISES

Anglo Caledonian Enterprises is the sole importer and distributor of Iseco Food Service Equipment to the UK. Iseco manufactures specialist food service equipment used primarily in the healthcare sector such as food service trolleys, bulk-food ward service trolleys, individual plated meal trolleys and single-tray meal systems.

The systems use Carbo-Fresh refrigeration technology which, without power, plug or cold-room, upon injection of C02 into the recipient cassette within the trolley instantaneously creates a uniform internal atmosphere [3˚C or -21˚C] regardless of the ambient air temperature.

Several new lines from Chef Line Solutions have their UK launch at the show including 700 and 900 series cooking ranges from Silko and nine models of holding and regeneration carts from Moduline such as the Moduline FS282E, a multi-use oven capable of bulk meat production and sous vide cooking.

Representatives of Fling International Bar Services, which runs training programmes in all aspects of bartending, will be present to demonstrate and explain the concept of molecular mixology using ingredients from the Cream Supplies range (our picture shows the group's raspberry pearls in Champagne).

Molecular mixology is one of the newest and most popular courses and aims to add a new dimension to cocktail making and open up countless ways of presenting drinks.

CONTROL INDUCTION

The Access Induction comprises four induction rings, two of 1.3kW and two of 1.8kW, all with timers and eight power settings. The key feature of the unit is that it is height-adjustable by means of an electronically controlled elevating system. The height adjustment is made by simply pressing the up or down arrow on the control pad.

HK Group offers kitchen and bar design and supply services and the company's stand will showcase the new Gallery bar range. A notable feature is the fact that the panels on the front can easily be changed to allow operators to change the colour for a specific function or event.

Tektroniks has more than 16 years' experience of building cutting edge equipment for monitoring and control within the food industry and recognises that operators want a system that is easy to install, easy to use, meets HACCP legislative requirements, is accessible for information and can cover a broad range of monitoring applications with a high degree of precision. Late in 2009 Tektroniks released its latest product, the Tektroniks Wireless DATAcentre, and this system will be on show.

UK Equipment Direct supplies pizza ovens from European manufacturer Moretti Forni, which has been at the forefront of pizza technology for 65 years. Its conveyor pizza ovens have five new patents and features include remote monitoring systems to offer the operator peace of mind and rapid response, and "cool round" technology ensuring minimal heat loss and significantly safer operation. Operators also receive training on how to get the most out of the oven and cook products such as chicken, baguettes, fish, pastry, naan bread and even chocolate chip cookies.

With increasing costs for the disposal of used furniture and electrical items the Furniture Re-use Network will use the show to promote charitable and environmental solutions to this costly problem while contributing to its main cause, to alleviate poverty.

Four million children in the UK live in households that cannot afford to replace worn out or broken furniture and three million children live in households that cannot afford to replace broken electrical items. Meanwhile 10 million items of furniture are thrown away in the UK every year, yet three million of these items could be easily re-used and more could be repaired.

INAMO

E-Table is claimed by its manufacturer, Compurants, to be the world's first interactive ordering system using overhead projection technology. Originally seen at Inamo restaurant in Soho, London, the E-Table allows customers to place orders from an illustrated menu projected onto their table via a touch-sensitive panel.

E-Table comprises a table made of Corian and a projector that is housed directly above. A Flash-based client PC above communicates with a wireless touch panel embedded in the table, thus enabling customers to navigate around the system.

A swimming pool chemical controller, the TEC 3000, and a range of LED underwater lights will be the new offerings on display from Topline. The TEC 3000 features an intelligent learning control system and simple user interface operated by a single press of a button. The LED underwater lamps will save energy and maintenance costs and are available in fixed colours white or blue and colour-changing.
