New Michel Cluizel chocolate lines from Town & Country Fine Foods

Normandy-based chocolaterie Michel Cluizel, renowned for processing its own cocoa beans, has extended its range with three new Elianza couverture chocolates that use sunflower rather than soy lecithin to make the mix fluid easier to work regardless of temperature and humidity.

They are Dark 55%, tasting of roasted cocoa and liquorice; Milk 35%, with hints of caramel ice-cream; and Ivory, with a crème brûlée/honey flavour.

Other newcomers include rectangular Façonnables, ready-to-fill hollow chocolate bodies with delicate edges, in dark or ivory chocolate; Le Soufflétine de Michel Cluizel, small puffed cereal balls to add lightness and crunchiness to chocolate creations; and three additions to the Confectioner's Pralines range - Pure Almond 50%, Pure Hazelnut 50% and Intense Hazelnut Gianduja, which are sold in 5kg buckets.
