The Pacojet food processor, distributed in the UK by Cooking Technology and Concepts, is used by more than 20,000 chefs worldwide. It processes raw ingredients from a frozen state into one-litre beakers that can be stored in the freezer until needed, and is claimed to improve profitability by reducing both time and waste.

For instance, the Pacojet can produce a sorbet from diced fruit in four minutes with no need to peel, purée and sieve-strain first.

As the blades can shave very fine layers, it can cope with trimmings, off-cuts and awkward shapes such as pineapple cores. And because the process does not break the freezing chain, large quantities can be prepared in advance of use.

There are two versions of the Pacojet: a standard model with six beakers, and a super variety with 18 beakers, a gold blade and a coupe set. Prices, excluding VAT, are £2,095 and £2,450.
