OEM of Mantua, Italy, this year celebrates 35 years of supplying a range of equipment that automates the pizza-making process and separates dough preparation from the baking and selling of the pizzas.

The BM2 Dough Divider and AS Dough Rounder (available as a combined unit or separate pieces) replace the need for a skilled pizzaiolo as they offer standardised cutting and rounding of the unrisen dough, which can be stored in the fridge at 3-4øC for up to six days.

The operator simply presses a key to select the chosen weight of the dough (from 50g to 300g) and the equipment will prepare up to 1,000 portions per hour - enough to cater for a chain of five to eight pizzerias for a week.

Pizzaform is a hot moulder that replaces the professional pizza chef to produce expert results at speed. The system uses heated plates to make up to 300 evenly-cooked round pasta bases (from 33cm to 45cm in diameter) per hour.

The upper plate has a smooth version or an option with 2mm flares that automatically form the pizza border.
