USP A portable cool smoker that adds smoky flavours to foods without cooking them or altering their texture. The low temperature works with previously unsmokeable items such as salad leaves, butter, oil chocolate, olives and alcohol.
Details A one-piece removable anodised aluminium smoking chamber with heat-resistant fan and a quiet motor.
Uses Used by Grant Achatz of Chicago's Alinea restaurant to trap smoke under glass for tableside release. Smoke cooked or prepared foods to add flavour to the exposed surface, or add smoke during blending or mixing to infuse flavour throughout sauces, soups, dressings and cocktails.
How supplied With acrylic stand, 18in nozzle extension tube, four AA batteries, and sample jars of Hickory and Applewood Smoking Sawdust.
Tip Use tea, spices, dried flowers, herbs and tobacco (with sawdust) in place of more traditional smoking mediums.
