The Protector Fryer with Smart4U technology - the latest addition to the Frymaster range - uses less energy and oil to produce the same amount of food without compromising the quality of the oil or the food.
It has the same production capacity as a 50lb fryer but uses just 30lb of oil, which represents a 40% saving each time it is changed - which could encourage caterers to invest in costlier but more healthy trans fat-free oils.
It achieves this increased productivity through precise heat transfer to the oil, which provides fast, efficient cooking and optimal recovery during peak times without accelerating oil breakdown.
The Smart4U technology can extend oil life by up to four weeks, while an inbuilt oil attendant monitors oil levels and tops them up as needed from a Jug-in box inside the fryer cabinet which warns when its supply gets low.
The built-in filtration system has a computerised reminder to staff that prompts them to consider whether they need to filter when they come on shift.
The Protector Fryer - which is part of the Enodis Enerlogic TM programme and exceeds Energy Star standards for high efficiency - won the Innovation of the Year Award last November at the Excellence Breeds Excellence Awards banquet hosted by the USA's Electric Foodservice Council.
