Pure by Bridor is a new line of organic, French-style frozen bread and Viennese pastries for caterers that was launched at Germany's Anuga trade show this month.
Both the BIO Baguettine and the BIO Viennese pastries are AB-certified and carry the European organic produce label, with 95% of the raw ingredients of organic origin.
The pre-baked 140g Baguettine is prepared using traditional techniques, such as slow kneading, riising and pre-baking on real stone to impart crustiness and a cream colour. It is redy in just 10-12 minutes at 210oC.
The 70g Pure Croissant and 75g Pure Pain au Chocolate -supplied in cases of 60 and 64 respectively - are based on authentic flaky pastry recipes using the ‘stress-free' dough-handling technique.
The ready-to-bake pastries take 18-20 minutes to bake in the oven at 170oC and, like the Baguettine, can be stored for up to six months.
