Quail farming start-up business to supply Coubrough's Flying Kiwi Inns
A new business rearing ethically-farmed quail has secured a deal to provide meat for Norfolk-based Flying Kiwi Inns, owned by chef Chris Coubrough.
Norfolk Quail, based in Great Ryburgh, was established by poultry farmers John and Ellie Savory, who with 12 years' experience in the poultry industry have expanded their business, J Savory, to include quail after discovering that much of the quail meat served in UK restaurants was imported from France.
"Quail is a very versatile and low-fat meat, but it's far more popular in Asia and Europe than in the UK so we believe that by making it available locally we can help get in on to menus and dinner tables in the UK," John Savory explained.
Coubrough said: "I'm a passionate supporter of local produce and my chefs are excited about creating delicious new dishes for our menus".
