If you can't afford a blast chiller, Mitchell & Cooper's Rapi-kool patented cooling vessels have been designed for the outside-in chilling of cooked foods to safe temperatures.
They can chill from 57°C to 21°C in two hours and to 5°C in four hours. The caterer fills the polycarbonate, dishwasher-safe vessels with tap water and freezes them down within a couple of hours - ice cubes can be used in place of water if time is short.
