Rare Breed Porchetta from Taste Tradition – EFDA

Taste Tradition's Rare Breed Porchetta has been entered in the Meat, Game, Poultry & Fish section of Caterer's Excellence in Food and Drink Awards 2009.

Our rare breed porchetta combines the very best of Yorkshire pork with continental inspiration. Porchetta is a speciality dish from the Umbrian region of Italy.

Rare Breed piglets are used due to the marbling within the meat which increases the flavour. The piglets are slaughtered at a dedicated family run abattoir, which is situated 8 miles away from our farm.

From here the piglet is transported to our butchery in Thirsk where it is boned out, rolled and stuffed. In summary we believe that to produce a great finished product we need to use the finest ingredients, and in Yorkshire we have some of the very best.

By using locally sourced ingredients and a local abattoir our products have very low food miles thus helping to keep other local companies in business.
