Brakes' Slow Cooked Shin of Beef has been entered in the Meat, Game, Poultry & Fish section of Caterer's Excellence in Food and Drink Awards 2009.
Due to it's need for long slow cooking, this traditional cheaper cut of beef has not been popular in foodservice. This individual portion has been slow cooked for 6 1/2 hours in it's own juices with salt, pepper and fresh thyme for the convenience of the caterer. This gives the sufficient seasoning to infuse into the meat and allows the chefs to finish the dish and personalise for their own menu.
