Small restaurants, hotels and pubs that have not been able to afford a blast chiller in the past are the targets of a new economy model from Foster Refrigerator whose list price of £2,650 is 15% cheaper than the group's previous budget model.
The FXBC120 Blast Chiller is compact but has a 10kg capacity.
It will blast-chill food from 70°C to 3°C within 90 minutes to retain food quality and comply with HACCP food safety laws, which say food must spend as little time as possible in the danger zone between 8°C and 68°C where bacteria proliferate most quickly.
As well as protecting customers from unwanted stomach bugs, the blast chiller can help caterers reduce wastage by chilling leftover food from hot servery counters for later use.
It can also help save time by allowing larger batches of food to be prepared in advance, as current legislation allows chilled foods to be stored below 3°C for up to five days.
